Air Fried Cauliflower Wedges with Rocket Pesto

Crispy, golden cauliflower wedges meet a punchy rocket pesto in this light yet flavour-packed dish. Air-fried to perfection, it’s a fresh, wholesome twist on comfort food — ideal for snacking, sharing, or a satisfying veggie meal.
What you will need
- FOR THE PESTO
 - Natural Herbs & Spices Garden Herbs
 - 80g Rocket
 - 50g Cashew or Pine nuts
 - 2 Tbsps mixed seeds
 - 2 Tbsps fresh chives, sliced
 - 1 small clove garlic
 - Zest of 1 lemon
 - 2 Tbsp lemon juice
 - Olive oil, for cooking
 - 2 Tbsp ice cold water
 - Lemon wedges, for serving
 - 4 Tbsp olive oil
 - Natural Herbs & Spices Garden Herbs
 - FOR THE CAULICLOWER
 - 1 head of cauliflower
 
Method
For the pesto:
Place all ingredients in a food processor or blender.
Season generously with Natural Herbs & Spices Garden Herbs Grinder.
Blitz until smooth or to desired consistency.
Depending on your blender, add a touch of extra oil or water if required to help it blitz.
Taste to adjust seasoning.
For the cauliflower:
Preheat air fryer to 200˚C.
Cut cauliflower into quarters.
Drizzle with olive oil and then season well with Natural Herbs & Spices Garden Herbs
Grinder.
Transfer cauliflower to the air fryer and cook for 5 minutes, depending on the size of the
wedges.
You still want a nice amount of texture and bite.
While the cauliflower is cooking lightly toast the seeds.
To assemble:
Swish a generous amount of pesto onto a serving platter.
Plate the cauliflower wedges and then sprinkle with toasted seeds, chives and lemon zest.
Serve with extra lemon wedges on the side and enjoy!
