Air Fried Fish En Papillote

Elevate your weeknight dinners with ease! This Fish En Papillote is cooked in a handy bag and in the air fryer, keeping all the flavours and juices locked in. A sprinkling of our Everyday Seasoning transforms this simple dish into mouth-watering delight. Try it for yourself!

What you will need

  • 10 baby potatoes, skin on, approximately 350g
  • 100g fine green beans
  • 150g baby tomatoes, sliced in half
  • 2 x white fish fillets, approximately 150g e.g. hake or kingklip
  • 100g olives
  • 2 Tbsp capers
  • Juice of 1 lemon
  • To taste Everyday Seasoning
  • Zest of 1 lemon, for serving
  • 1 Tbsp chopped parsley, for serving
  • Olive oil, for cooking

Method

Boil potatoes in water until tender. 
Slice and set aside. 
Using the same water, quickly blanch the green beans to give them a slight precook. 
If using fine beans, blanch very briefly. If using standard green beans, cook until close to tender. 

Cut 2 large pieces of baking paper. 
(NB: Think about the size of your air fryer basket and that will determine how you stack your veg and fish. If you want to fit two parcels next to each other and cook them at the same time then create narrow parcels with veg stacked more tightly. If you are making a single portion you can spread things out more, or you can cook them one after the other but keep the first bag sealed until serving so that everything stays warm.) 

Preheat air fryer to 200˚C. 

Divide the sliced potatoes, green beans and tomatoes between the two pieces of baking paper. 
Drizzle with olive oil and season lightly with Natural Herbs & Spices Everyday Seasoning Shaker. 
Add the olives and capers and place the fish in the centre of each bundle. 

Drizzle the fish with olive oil and season lightly with Natural Herbs & Spices Everyday Seasoning Shaker. 
Fold the baking paper up and over the fish and veg, securing it to create a well-wrapped pouch. 
Just before sealing, pour in the lemon juice and then fold up tightly. 
Transfer to the air fryer and cook for 10 minutes, depending on the size and thickness of your fish fillets. 

Carefully transfer parcels onto a serving plate. 
Tear them open, sprinkle with lemon zest and parsley and enjoy!
