Easter Egg Brownie

On the hunt for an excellent Easter treat. Well, we might just have what you are looking for, with our grain-free, oil-free and sugar-free brownie. Rustle up a batch of this brownie for dessert or a tea time treat. A great way to add a whole lot of sweetness to your Easter this year without sacrificing calories. This healthy brownie can be made in a matter of minutes, we can guaranteed that you will have a sweet treat on the table in under an hour. We promise!!

What you will need

  • FOR THE BROWNIE
  • 250g bananas, ripe
  • 1 cup smooth peanut butter
  • 1/3 cup milk
  • 2 eggs
  • 1tsp vanilla essence
  • 2 Tbsp sweetener
  • 2 sachets Natural Herbs and Spices Support Smoothie Booster
  • ¼ cup unsweetened cocoa powder
  • FOR THE TOPPING
  • ½tsp baking powder
  • 100g dark chocolate
  • ½tsp bicarbonate of soda
  • 2 Tbsp milk
  • Pinch of Natural Herbs and Spices Coarse Sea Salt
  • Mini eggs

Method

Start off by preheating the oven to 180°C and lining a square baking pan with baking paper.

In your blender or food processor combine all your brownie ingredients. Blend until you have a smooth and creamy batter.  Alternatively if you don’t have a blender or food processor you can, mash the bananas with a fork and mix in the rest of the ingredients. Mix until you have a smooth batter, don’t worry if you have bits and piece of banana it will add character to your brownie.   

Now, pour in your brownie batter into your prepared pan and bake for 15-20 minutes, or until a toothpick inserted into the centre of the brownie comes out clean. Once your brownies is out of the oven leave it to completely cool. This might be the most difficult step.

Pop your chocolate and milk into the microwave and melt until silky and velvety. Pour the chocolate over the cooled brownie and immediately top with the mini eggs.  Now, pop the brownie into the fridge to set before cutting into squares and enjoying.
